ALMOND JELLY

Almond Jello or Jelly is a delicious and refreshing dessert made with almond extract and milk often served with fruit cocktail.
The first time I tried this Almond Jelly was 2 decades ago when I was working as a store supervisor at a Chinese Restaurant in the Philippines. One of our best selling dessert!
​ It is actually very simple and easy to prepare. The good thing about this dessert, you can serve it alone and just add any sweet syrup. Or serve with fruit cocktail or any fruits of choice. For me, fruit cocktail is perfect because of its' color and texture and it comes with syrup already.

You can also add more sweet cherries for color. This is a dessert that can feed a crowd. Something I will bring for a potluck or a dessert to serve for parties. A treat you can make without a sweat and will please the your guests.

For this recipe, I used Knox gelatin. Please make sure that if you will be using other brand, check the label and follow the instructions on water dilution. I notice that gelatin brands vary on water requirements so please take a note of that.

Here's how I made it. Dissolve sugar in water and set aside. In a large pot, dissolve sugar in water, bring to a light simmer then add milk and almond extract. Stir and bring again to a light boil. Transfer to molds, remove air bubbles and refrigerate to set. Slice into cubes then serve with fruit cocktail. That's it! See I told that is super easy to make. almond JELLY fruit cocktail RECIPE

Ingredients:
  • 1 cup water + 2 cups water, divided
  • 28 grams unflavored gelatin powder ( I used Knox)
  • 1 cup granulated sugar
  • 2 cups whole/fresh milk
  • 30 oz can fruit cocktail in syrup
  • 1 oz or 2 tbsp almond extract
Note: If using other gelatin brand, make sure to follow label instructions as water requirement varies.

Procedure:
  • Combine 1 cup water and gelatin powder. Stir until powder is dissolved. Set aside. Note: I used Knox gelatin. The mixture turned into solid and that's ok.
  • In a large saucepan,  combine 2 cups water and sugar. Stir until sugar is fully dissolved. Cook over medium and bring to a light boil. 
  • Lower heat and add dissolved gelatin. Stir until gelatin is fully dissolved. You can bring the heat to medium and bring again to a light boil. Remove from heat.
  • Slowly add milk and almond extract while stirring until well incorporated.
  • Pour the mixture into a large glass pan or pans. I didn't fill the pan fully but instead used two pans and only filled up to an inch high. Let the mixture cool completely. Refrigerate to set then cut into small cubes. 
  • Transfer all the almond jelly cubes into a large bowl and add the whole can of fruit cocktail with syrup. Stir until combined.
  • Serve and enjoy!
