banana pancakes

This banana pancake is a must try. I can guarantee that. Because the first time I made this, my husband said, "This is the best pancake I have tasted!" I replied, is that because I am your wife and you are forced to make a comment like that?" He honestly responded, " No, it is just so good. I can really taste the banana that's why I like it." 
He was right. I think because the banana I used has been waiting for me for days to make something good out of it. It was over overripe. I mean, full of dark spots. Easy to mash and sweeter. I thought about making my recipes Easy Banana Bread or another moist banana recipe Sour Cream Banana Bundt Bread but I said to myself, "how about twist a regular pancake?"

So, this banana pancake that I am bragging about is fluffy, moist, delicious and easy to prepare. Please find the recipe below. You can also check out my Souffle' Pancake and Buttermilk Pancake recipes. They are great as well. ​

banana pancakes recipe

INGREDIENTS:​
  • 1 cup pancake mix (I used Bisquick, you can use other pancake mix but get a good brand.)
  • 1 tbsp sugar (adjust according to your preference) 
  • 1 tsp baking powder
  • 2 medium overripe banana, about 1/2 cup-3/4 cup when mashed
  • 1/2 cup whole milk, you can also use almond milk
  • 1 egg
  • 1/2 tsp vanilla extract
HOWT TO MAKE:
  • Combine pancake mix, sugar and baking powder. Mix until well combined. 
  • Add, milk, eggs, mashed bananas and vanilla extract. Whisk until blended.
  • Let it sit on the counter for 5-10 minutes. I find it fluffier when I do this.
  • Heat up a pan or griddle. I used an 8" pan. 
  • Add a small amount of butter or margarine.
  • Pour 1/3 of the batter into the pan or griddle.
  • Cook in low heat and cover for about 2 1/2 minutes or until it starts to bubble and edges are dry.
  • Flip the pan (which I can't do lol) or use a spatula to lift it and flip to cook the other side. 
  • Cook until golden. 
  • Transfer to a serving plate.
  • Serve or top with your favorite fruits, syrup and sprinkle with powdered sugar.
  • Recipe yields 3 (8") pancakes.
  • Enjoy.
