cherry tomato salad

It's almost summer here in California and my tomato plant is booming. It has grown so big that I have harvested so many cherry tomatoes and more to harvest as you can see on the photo below. 
​
I have made many different kinds of recipe using them but I thought of making a tomato salad with buttermilk and sour cream instead. And for it to be not too boring, I added some chicken strips. Delicious and very simple to make.

The process is very simple, slice the cherry tomatoes in half, prepare the sauce which is composed of buttermilk, sour cream, chopped garlic, chopped onion, salt and pepper. Add the chicken strips then seasoned with basil. Yum!

INGREDIENTS:
  • 1/2 cup chicken strips, cooked in butter
  • 3 cups cherry tomatoes, halved if large
  • 1/2 cup buttermilk
  • 1/3 cup sour cream
  • 1 shallot or 2 tbsp chopped onion,
  • 2 cloves garlic, chopped
  • salt and pepper to taste
  • fresh or dried basil

​Buttermilk Substitute: 
  • 1/2 cup milk
  • 1/2 tbsp lemon juice or vinegar
  • Stir together and let sit for 5 minutes.

How to prepare: 
  • If adding chicken, slice the chicken in strips. Season with salt and pepper. Fry in  skillet with butter. Set aside. 
  • Slice the cherry tomatoes in half (if large). Place them in a large bowl and season with salt and pepper. 
  • In another bowl, whisk the buttermilk, sour cream, shallot/onion and garlic. Season with pepper.
  • Add the cooked chicken strips.
  • Drizzle the dressing over the tomatoes and toss.
  • Season with basil.
