CHICKEN MACARONI SALAD with PINEAPPLE

This recipe of Chicken Macaroni Salad is very special for me because this is my moms'. When I first created my blog for this recipe in 2014, and created a video last year, it became one of my most viewed recipe on my Facebook cooking page (which is now missing in action). Just so you know, instead of waiting for it to come back, just a few months ago. I created a new Facebook Page so I can continue sharing my recipes to my followers. Having said, that, I wrote this new blog so that I can also include a video remake of this delicious salad. I didn't change a bit from my old blog just this new format and new photos. 

Anyway, I can't count how many of my followers tried this and all I get is a good feedback. ​Many recipes out there just uses mayonnaise. This one has added table cream that makes it so delicious! Also pineapple and cheddar cheese is also mixed in here with a small amount of condensed milk. Those ingredients gives a perfect balance of taste for this Macaroni Salad. It's the sweetness, creaminess and a little of bit of salty and sour taste is the secret so make sure not to omit or substitute any of the ingredients on this recipe. 
But, I always get questions about Table Cream. What is it? ​

​Table cream is a type of cream that has a different fat content and texture compared to other creams like heavy cream, all purpose cream, etc. that is normally used on salads and fruits. I used Nestle Table Cream. In the Philippines it is available in many grocery stores. If you are here in the US, just to let you know that Walmart carries this brand as well. 
Making this is very simple, just prepare the chicken breast by boiling and shredding into fine strands. Then cook the macaroni pasta. Then combine them all in a large bowl. That's it :) Give this recipe a try and let me know what you think by leaving a comment below. Enjoy! 

chicken macaroni salad recipe

Ingredients:

• 1 cup chicken breast, cooked and shredded
• 8-10oz mararoni pasta, about 2 cups when cooked
• 1/3 cup carrots, chopped
• 2 tbsp yellow onion, chopped
• 3/4-1 cup pineapple tidbits
• 1/2 cup cheddar cheese, cut into small cubes
• 1/3 cup raisins
• 1 tbsp sweet pickle relish
• 3/4 cup mayonnaise
• 1/2 cup nestle table cream
• 2- 2 1/2 tbsp condensed milk
• pinch of salt

Procedure:

• In a small pot, boil the chicken breast and cook until tender, about 10-12 minutes. Remove from water and let it cool.  Using your hands, shred the chicken breast into thin strands. Set aside.
• In a medium pot with boiling salted water and some oil, cook macaroni until al dente, about 8-9 minutes. Follow packaging instructions. Drain and rinse under cold water (to stop the cooking process and avoid sticking).
• In a large bowl, mix all ingredients together until well combined. 
• Refrigerate for several hours before serving. It is best served when cold. 
• Recipe yields about 5 servings. You can double or triple the recipe if you are having a crowd.
