Chicken Sipo Egg

ipo Egg is a Kapampangan dish made from mixed vegetables and quail eggs cooked in a rich, thick, savory and creamy white sauce. For this recipe, I used chicken breast. You can also chicken leg meat or shrimp. Ham can also be added. The cream sauce is also very flexible. You can use all purpose cream, table or heavy cream.  Whatever is available in your area.

​An great main dish or appetizer loaded with vegetables. Easy and simple to make yet  so flavorful.

Ingredients:
  • 1/3 cup butter
  • 5 cloves garlic, chopped
  • 1 medium white onion, minced
  • 1/4 kilo chicken breast, strips
  • 500 g mixed vegetables, (carrots, peas, corn)
  • 1 chicken chicken cube
  • 1 tsp garlic powder
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 1 cup water
  • 250 g All purpose cream
  • 2 tbsp cornstarch + 2 tbsp water 
  • 20-25 pcs Quail Eggs​

Procedures
  • Boil enough water in a deep sauce pan. Cook the quail eggs for 5 mins. Remove shells and set aside.
  • In a wok or pan, melt butter. Saute garlic and onion.
  • Add the chicken strips and cook for about 2 minutes.
  • Add the mixed veggies, chicken cube, garlic powder, salt & pepper. Stir until combined.
  • Add water, all purpose cream and cornstarch dissolved in water. Let it simmer and cook until sauce starts to thicken.
  • Add cooked quail eggs and cook for another minute. 
  • Serve and enjoy.
