​Chicken Sotanghon is a Filipino soup made from long thin cellophane or glass noodles or mung-bean starch. Sotanghon noodles have also been called bean-thread noodles or vermicelli.  A flavorful soup perfect during rainy season and cold weather.

​The key to this delicious Chicken Sotanghon soup is the broth with some annatto extract that adds  some color and flavor to it as well as the toasted garlic which you can adjust according to your liking. This delicious soup can also be served with boiled eggs if desired.

chicken sotanghon soup recipe

Ingredients:
  • 1/2 - 3/4 lb chicken breast
  • 8 cups water
  • 1 tsp salt
  • 1 cup annatto extract  (1/3 cup sesame seeds  +  hot 1 cup chicken broth from reserved soup)
  • 6 -8 cloves garlic (for toasting) 
  • 4 cloves garlic, minced
  • 1 small onion, chopped
  • 2 bundles (4 oz) vermicelli / sotanghon noodles
  • 1/2 cup carrots, julienne
  • 1 cup cabbage, shredded
  • 1 piece chicken cube
  • 1/3 cup green onion or scallions, chopped 
  • 1 tbsp fish sauce (adjust to desired amount)
  • ground pepper to taste

Procedure:
  • ​Boil chicken breast in water for about 8-10 minutes. Reserve the broth. Let the chicken breast cool down. Shred and set aside. 
  • Prepare  the annatto extract by combining  1/3 cup annatto seeds and 1 cup hot chicken broth. Mix until color is achieved. Set aside. 
  • Saute' garlic and cook until golden and toasted. Set aside.
  • Using the same pan, saute' garlic and cook until aromatic.
  • Add the onion and cook until soft.
  • Add the shredded chicken breast. Cook for about 2 minutes.​

  • Add the rest of the reserved chicken broth. Let it boil.
  • Add the chicken cube and annatto extract. Continue boiling.
  • Add the sotanghon noodles  and cook for 5 minutes.
  • Add the carrots and cabbage. Cook for another 5 minutes.
  • Add the fish sauce, green onions  and toasted garlic. Cook for 1-2 minutes. 
  • Season with pepper and serve hot with boiled eggs if desired.
  • Enjoy.
