chicken tocino

​Chicken Tocino is Philippine's popular breakfast.  The chicken meat is marinated in pineapple juice, brown sugar, banana ketchup, salt and pepper. 

​It is best served with garlic rice and fried eggs. Usually dipped in vinegar with mild chili pepper. Some serve it with sliced tomatoes. Whichever you prefer, they are both delicious!

This recipe is so easy to prepare. Just combine all the marinade ingredients then add your chicken meat. I used chicken leg meat for this one instead of the chicken breast because chicken breast tends to be dry. Chicken leg meat has some fats to it that makes your Tocino juicy and tasty. 
If leg meat is not available you can use chicken breast but make sure to pound the meat to make it thinner and loosen up so marinade will be easily absorbed by the meat.

chicken tocino recipe

Ingredients:
  • 2 lbs chicken leg meat, thinly sliced and cut into serving portions
  • 1 cup pineapple juice
  • 2/3 cup brown sugar
  • 4 tbsp banana ketchup
  • 1 1/2 tsp iodized salt
  • 1/4 tsp ground black pepper
  • cooking oil for frying ​

Procedure:
  • Combine marinade. ingredients. Stir well.
  • Marinade chicken in mixture.
  • Cover and refrigerate for over night or better for 24 hours.Turn at least once.
  • Pan-fry in cooking oil.  
  • Serve with sunny side up eggs and plain rice or garlic rice and vinegar as dipping sauce.
  • Enjoy!
Note: Cut the recipe in half if only serving for 4 people or less.
