choco butternut cake

Choco Butternut Cake became famous in the Philippines because of Dunkin Donut's donuts covered with butternut streusel. For me though, I find their cake/donut batter a little dry so I thought of making my own and use my chocolate cake recipe. Super moist and delicious!

​This recipe can make two loaf pans. If you want to make just one loaf, make the other half using my Chocolate Cake with Creamy Chocolate Frosting.

​choco butternut cake recipe (Watch my video here)

​Ingredients:
  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups sugar
  • 3/4 cup Hershey's Cocoa unsweetened powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 cup whole milk or 2 % 
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Butternut Coating ingredients:
  • 1 1/2 cup all purpose flour
  • 1/2 cup white sugar
  • 1/3 cup butter/margarine
  • unsalted
  • 1/2 tsp nutmeg powder
  • 2-3 tsp orange food color​
Glaze Ingredients:​
  • 1 cup powdered sugar
  • 4 tbsp whole milk
  • 1 tsp vanilla essence​

 Procedure: 
  • Preheat oven to 350 degrees F.
  • Grease two loaf pans or  two 9 inches cake pans.
  • Combine dry ingredients in a large bowl. 
  • Add eggs, milk, oil and vanilla; beat for about 2-3 minutes.
  • Stir in boiling water. Batter will be thin.
  • Pour batter into prepared pans.
  • Bake for 30-35 minutes or until wooden pick inserted in center comes out clean. 
  • Cool for 5 minutes. Remove from pans to wire racks. Cool completely.​
  • ​For the butternut coating:
  • Melt butter over low heat.
  • Add all purpose flour and mix well. 
  • Add sugar and nutmeg powder. Stir and let the mixture cool.
  • Add orange food color and mix well. ​

​For the glaze: 
  • Combine glaze ingredients and mix well.
  • Glaze the whole cake.
  • Coat the whole cake with butternut.
  • Chill for few minutes until it sets up​.
Tips:
  • Do not over bake the cake or it will be dry. Make sure to check before the set time as oven temperature varies.  
  • Some nutmeg powder are too strong. Please make sure to add 1/2 tsp and adjust if needed. 
  • For food color, if orange is not available, you can just mix an equal amount of red and yellow color. Do not put too much if using liquid food color.  It leaves an after taste and is also bad for your health. 
  • For this recipe, I used gel food color. It doesn't alter the taste of my coating.
