CHOCOLATE BUTTER MOCHI

If you are a fan of mochi and chocolate, then this recipe is for you! It's like eating Mochi Brownie. It is soft, chewy, fudgy, chocolatey! A recipe that's super easy to prepare! 
​I ha
ve made plain Butter Mochi before as well as Ube Butter Mochi and thought of making this chocolate version since the recipe base has been tested by many of my followers already. 
But let's talk about Butter Mochi first. Butter Mochi is a hawaiian dessert made with coconut and butter in a glutinous rice flour base.

You are probably wondering what's that crusty layer on top? It is actually coconut milk mixed of course with some chocolate that floated on top during baking. You can tell when it's ready when the top starts to crack. Yes, that's one hint aside from when your kitchen smells really good. Once you take this out of the oven, you'll definitely be tempted to slice it up. Just make sure to let it cool for a bit then yes, start indulging yourself with this delicious treat because it is best eaten when warm.

CHOCOLATE BUTTER MOCHI RECIPE

Ingredients:
  • 1 cup unsweetened chocolate chips
  • 1/2 cup unsalted butter, melted
  • 5 large eggs, room temperature
  • 2 cups fresh milk (I used 2%)
  • 1 can (13.5 ounces or 400ml) coconut milk
  • 1 tsp vanilla
  • 1 pack (16oz / 1 pound or 4 cups) glutinous rice flour
  • 2 cups sugar, adjust accordingly
  • 2 tsp baking powder
  • 1/4 cup unsweetened cocoa powder​​
  • oil or butter for greasing
Procedure:
  • Preheat oven to 350F/176C. 
  • Generously grease a 13x9 baking pan with oil or butter.  Set aside. 
  • In a microwave-safe bowl, combine chocolate chips and butter.  Microwave on high at 30-second intervals. Stir until melted.  You can also melt the chocolate chips using a double boiler method by boiling a small amount of water in a saucepan. Place a heat-proof bowl on top of the saucepan (bottom of the bowl should not be touching the water) then add the chocolate chips and butter. Stir until smooth and fully melted. Remove from heat and set aside to cool.
  • In a medium bowl, combine milk, eggs, coconut milk and vanilla. Set aside.
  • In a large bowl, combine flour, sugar, baking powder and cocoa powder.  Make a well at the center then pour the liquid mixture. Stir until well incorporated. Add the melted chocolate and whisk well to combine or until mixture is smooth. 
  • Pour mixture over the prepared pan. 
  • Bake for 1 hour or  1 hour and 15 minutes or until mixture is set.  Remove from oven and let cool for few minutes then slice to serve.
  • Best served when warm.
