UBE BUTTER MOCHI

Butter Mochi is a Hawaiian dessert made with coconut and butter in a glutinous rice flour base. Sticky, soft and buttery. I can compare the texture to Tikoy and Cassava Cake . I've made the plain Butter Mochi before and this time I thought of making it with ube flavor. I omitted the coconut flakes and added coconut milk instead. It worked!  
The coconut floated on top during baking that made the brown crust on top. It tastes like Latik, or curd coconut cream that we add to our Kakanin or Kalamay (Rice Cakes).

And because the coconut crusted on it's own, then there's no need to make latik which takes time to prepare.  To make this Ube Butter Mochi is very easy! Just combine the wet and dry ingredients in different bowls then combine them together. You can also do this using a blender. Transfer to a 13 x 9 pan and bake at 350F for 1 hour or until top is golden brown. You can tell when it's ready when the top starts to crack. How simple is that? You can make a delicious and easy to make Ube Butter Mochi without a sweat!

ube butter mochi recipe

Ingredients:​
  • 5 large eggs, room temperature
  • 2 cups fresh milk (I used 2%)
  • 1 can (13.5 ounces or 400ml) coconut milk
  • 1 tsp vanilla
  • 1/2 cup unsalted butter, melted
  • 2 tsp ube flavor
  • 1 pack (16oz / 1 pound or 4 cups) glutinous rice flour
  • 2 cups sugar. adjust accordingly
  • 2 tsp baking powder

Procedure:
  • In a medium mixing bowl, stir together eggs and milk. Whisk until eggs are fully beaten. Add butter, coconut milk, vanilla, and ube flavor. Stir until well combined. 
  • In a large mixing bowl, add flour, sugar, and baking powder. Stir to combine. 
  • Make a hole at the center of the dry ingredients and pour the wet ingredients. Stir until fully incorporated.
  • Line a 13x9 baking dish or pan with parchment paper or grease the pan generously with butter or oil.
  • Pour mixture in prepared pan. 
  • Bake in a preheated oven at 350F for 1 hour or until the top is golden brown. 
  • Remove from oven and let cool for few minutes then slice to serve.
  • Best served when warm.

This recipe was perfect and it turned out so well. My household can't stop eating it! It reminds us of the texture in Vietnamese green/yellow layered dessert called "banh da lon". This recipe turned out very flavorful with the perfect mochi texture. It's also MUCH MUCH less work to make this compared to traditional mochi.We'll be making this again and again. I'll try it with pandan flavor next time.
