Easy Classic Fried Chicken

I am sharing to you my mom's classic Fried Chicken Recipe. Crispy and crunchy on the outside and moist and juicy on the inside.
She uses self-raising flour to give it a nice crispy skin. But, not everyone has self-raising flour available in their area so I substituted it with all-purpose flour, baking powder and salt. Ingredients that I know are available in every kitchen.
This recipe is classic, super easy to make and delicious!

First, rinse the chicken legs and pat dry. Season with salt and pepper. Let stand for at least 30 minutes. While waiting. combine all-purpose flour, baking powder and salt. Beat the eggs.

Dip the seasoned chicken legs in beaten eggs and dredge in flour mixture.

Well coated chicken legs ready for frying. In a deep pot or pan, heat oil (preferably peanut oil) to 350 F.

Deep fry until golden and crispy, about 10-15 minutes.

​easy classic fried chicken recipe

Ingredients:
  • 6-8 pieces chicken legs and or chicken thighs
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs 
  • salt and pepper to season the chicken
  • oil for frying, preferably peanut oil

Procedure:
  • Rinse the chicken legs and pat dry.
  • Season with salt and pepper. Let stand for 30 minutes.
  • In a bowl, combine flour, baking powder and salt.
  • In a another bowl, beat two eggs. 
  • Dip the seasoned chicken in egg then coat well with flour mixture.
  • In a deep pot or pan, heat oil to 350 F .
  • Note: If you do not have a gadget to check the temp of the oil, just make sure that the oil is hot enough before dropping the chicken. If not, your chicken will be oily. To check the oil, dip the edge of a wooden spoon. Oil is ready when bubbles gather around it.
  • Deep fry for about 10-15 minutes or until golden and crispy. Frying time varies depending on the size of the chicken.
  • Remove from oil and drain on paper towels.
  • Serve with Gravy, Banana Catsup, Sarsa ni Mang Thomas or Ranch.
  • Enjoy.
