EASY TRES LECHES CAKE

Tres Leches Cake or Three-Milk Cake is a sponge cake soaked in three kinds of milk that's why it's called Tres Leches. Tres means three and Leche means milk. The extra moist cake is topped with whipped cream, cinnamon powder and fruits (if desired). The ultimate cake to indulge with! ​
This cake was made without butter and just plain flour (all purpose flour) was used. It came out super light and airy. The only key ingredients are eggs that were separated in order to make the cake light which is perfect for soaking.

​I have made this Tres Leches Cake last year but it didn't look fancy as I really didn't decorate it with more fruits like this one.
​To get an idea, I googled Tres Leches Cakes for images and I saw one that captured my eyes.  It's from Albertson's - one of our long time grocery stores with bakery department and I find their presentation really nice so I made one exactly like how they arranged it except mine is dusted with cinnamon powder. It happened as well that I have those fruits in the fridge. Perfect!

But, you can top it with any fruits that you like. Blueberries, blackberries or raspberries are good choices and can be added here as well.  If you don't have fresh fruits, you can also use fruit cocktail or peaches in can. Just make sure to drain really well.

TRES LECHES CAKE RECIPE

​Ingredients:
  • ​1 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 5 large eggs, room temperature, separated
  • 2/3 cup + 3 tbsp granulated sugar 
  • 1/3 cup whole/fresh milk
  • 1 1/2 tsp vanilla extract
​For soaking:
  • 1 tall can (12 oz) evaporated milk 
  • 3/4 can or 1 can (14 oz) condensed milk
  • 1/4 cup whole/fresh milk
​For whipped Topping:
  • 2 cups heavy whipping cream
  • 2 tbsp granulated sugar
  • 1/2 tsp vanilla extract
  • ground cinnamon for topping

​Procedure:
  • Preheat oven to 350 F. Lightly grease 13 X 9-inch baking pan.
  • In a bowl, combine flour, baking powder and salt. Set aside.
  • In another bowl, combine egg yolks and 2/3 cup sugar. Mix until yolks are pale yellow. Add fresh milk and vanilla extract. Stir until well combined. Add egg yolk mixture to flour mixture and stir until just combined. Do not over mix. Set aside.
  • Beat together the egg whites and 3 tbsp sugar until stiff peaks are formed. Fold the egg white mixture into the batter just until combined. Transfer to the prepared pan. Smooth into even layer. 
  • Bake for 20-25 minutes or until toothpick inserted comes out clean. Remove from the oven and cool completely. Using a fork, toothpick or skewer, poke holes all over the top of the cake. 
  • ​In a small bowl, combine evaporated milk, condensed milk and 1/4 cup whole fresh milk.
  • Gently pour the milk mixture over the cake. Refrigerate the cake for at least 12 hours or overnight to fully soak the cake. 
  • In a medium bowl, beat whipping cream, 2 tbsp sugar and vanilla until stiff peaks. Smooth over the top of the cake. 
  • Sprinkle with ground cinnamon and top with strawberry or other fruits that you like (if desired). Enjoy.

First time trying to make it. Followed ingredients to a t and it turned out so scrumptious. Not a frequent baker and my friends couldn't believe I made it myself.

One note, my cake shrunk 10%ish in the pan so the tres leches couldn't fully soak... Is this intentional?
