Kinilaw or kilawing puso ng saging si one of the many Filipino dishes that I love. Best paired with any fried fish. It very easy to cook.... just the part of preparing the banana blossoms in removing the bitter sap is a process to make sure nothing is left or else the dish will taste bitter.

To prepare, trim the banana blossoms,  peel and discard the outer fibrous skin layers until you reach a lighter, softer core. It is important to soak the sliced banana blossoms in cold water with salt then rinse and squeeze to remove bitter sap. Repeat as necessary until bitter sap is no longer visible. Make sure to rinse well and drain before cooking. 
Cooking is easy, just saute garlic and onion. Add the pork and cook until pork turns light brown. Add fish sauce or salt to taste. Add the banana blossoms and make sure to cook it well or until it softens and releases liquid. Then add water and vinegar. Do not stir after vinegar is added. Let it cook first. Simple and delicious!

how to cook kinilaw na puso ng saging

​​INGREDIENTS:
  • 2 medium banana hearts
  • ​​1 lb pork belly, cut into strips
  • 5 cloves garlic, minced
  • 1 medium onion, minced
  • 2 tbsp fish sauce
  • 1 cup water
  • 1/3 cup vinegar
  • 1/2 tsp ground pepper
  • salt to taste
  • 2 pieces chili pepper, siling labuyo (optional)
HOW TO PREPARE:
  • ​Trim off stem of banana heart. Peel and discard the outer, fibrous skin layers of banana heart, until you reach the lighter, softer core. Cut in half and slice thinly. Soak in cold water with salt for 20 minutes then squeeze to release bitter sap. Rinse at least 4x and drain well. Set aside.
  • In a pan or wok, heat cooking oil.
  • Saute garlic then add onion and cook until translucent.
  • Add pork and cook, stirring occasionally until color turns light brown. 
  • Add fish sauce and continue to cook for about 5 minutes or until pork is tender.
  • Add the banana heart. Stir occasionally and cook until softened and releases liquid, about 5 minutes. 
  • Add water, cover and simmer for 5 minutes.
  • Add vinegar. Cook uncovered without stirring for 5 minutes.
  • Add chili pepper (if desired). Stir and continue to cook for another 10 minutes. 
  • Serve with hot steamed rice.
