Macapuno balls is a sweet but delicious soft candy or dessert many Filipinos love to snack on. It is made from condensed milk mixed with macapuno preserves (coconut sport), water and cornstarch rolled in dessicated coconut.
Way back in the Philippines, I remember buying this at a vendor as we ride on a bus and munch on it on a 3 hour travel to my hometown. Of course that is a commercial one and doesn't have that much flavor like this one.
This recipe is very easy and simple to make. Just combine condensed milk and macapuno preserves, cook until slightly thickens, add the cornstarch mixture and stir continuously until the mixture becomes really thick. Transfer to a plate brushed with butter, let it cool, shape them into balls and coat with dessicated coconut. You can also wrap them invidually with a cellophane if you like.
