Meatballs soup (Almondigas)

This Meatballs Soup also called Almondigas is a comforting and delicious Filipino soup made with meatballs and misua (thin flour noodles). Some version adds patola or silk squash.  You are free to add it if you like. On this recipe, I used lean ground beef but you can also use pork. I also used rice wash and fried the meatballs first. Trust me it's better than just dropping the meatballs in soup until it's done.

What is rice wash? Rice Wash  is a reserved liquid from 2nd or 3rd rice rinsing. What? Here it is. Add 6-cups of cool/cold water into a bowl and add 2-3 cups of raw unwashed rice, swish it around with your fingers for a couple of minutes to wash the surface starch off of the rice, then drain and reserve the liquid. The reserved liquid is then your rice wash. Why do we use rice wash? First, it makes the food taste better. Second, it adds starch to the soup which in turn thickens it.

I suggest, if you'll eat this soup with rice, might as well make the rice first and reserve the rice wash. If not, water can be used instead. So, give this recipe a try. I know for sure the whole family will love it. Enjoy.

meatballs soup / almondigas recipe

Ingredients:
  • 1 pound ground beef or pork (I used ground lean beef)
  • 1/4 cup chopped onion
  • 1 tsp salt
  • 1/2 tsp ground pepper
  • 1 egg
  • all purpose flour for dredging
  • 4 cloves garlic, minced
  • 1 small onion, sliced
  • 3 cups rice wash or water
  • 1 beef or pork bouillon cube
  • 1/2 tbsp fish sauce
  • 1 small bundle misua (thin flour noodles)
  • 2 bulbs or 1/2 cup green onions, chopped
  • cooking oil for frying

Procedure:
  • In a medium bowl, combine  salt, ground pepper, onion and egg. Mix until fully incorporated.
  • Shape into 1 1/2" to 2" balls and roll in flour. (Makes about 18-20 pieces meatballs.)
  • In pan, fry the meatballs until golden. Remove from pan and drain and paper towels. 
  • Discard excess oil in pan. Saute' garlic and cook until fragrant.
  • Add onions and cook until soft or translucent.
  • Add rice wash or water. ( Scroll up to read more about rice wash).
  • Add the bouillon, meatballs and fish sauce or salt to taste. Bring back to a full boil.
  • Add misua. Simmer until misua is cooked about 1-2 minutes. 
  • Add green onions and turn off heat. 
  • Enjoy.
