MOCHI DOUGHNUTS

These are Mochi Donuts also similar to Pon de Ring which is Mister Donut's signature donut in Japan. I've searched for recipes online and I have seen many different versions. Some with yeast and some without. Some using glutinous rice flour, and some using tapioca flour. Some with pure glutinous rice flour and some mixed with all-purpose flour. The only similar ingredient they used is the soft tofu. Which means, we cannot omit it.
​I plan to make different versions of this Pon de Ring and I will compare them all  in the future. I will also play with a variety of frosting or glaze as I research more about it.

​Today, I made an easy version without yeast using a combination of glutinous rice flour and all-purpose flour. I also used white chocolate frosting with matcha and ube flavors. The colors are amazing. So pretty!
The next batch I will make for another version will definitely a simple glaze. So stay tuned for that. 
This version is simple and easy. I just combined the rice flour, all-purpose flour, baking powder and sugar. Then the egg and tofu and knead by hand until it forms a dough.

​I formed it into a ball then divided the dough into 8 equal parts. I took 1 part and divided it again into 8 parts then rolled each piece of dough into small balls. I cut out about 4x4 parchment paper and arranged the dough balls into a ring,  dropped the formed dough into hot oil with the parchment attached then pulled the parchment paper out from the pan. I just fried them until golden.
​TIP: Make sure to not overcook or over-fry or the donuts will be dry and hard. Also make sure that the oil is not too hot and do not overcrowd the pan.

​​These Colorful Frosting? 
Just combine white chocolate chips and hot heavy whipping cream to melt the chocolate and add any flavor you like. Here, I added about 1 tsp matcha powder and for the other one is about 1/2 tsp ube flavor.  For the chocolate frosting, I used semi-sweet chocolate chips and poured hot heavy whipping cream to melt. 
What did I use to decorate? 
It's melted white chocolate transferred in a piping bag with the tip cut off. I drizzled it on the other half of the donut and then topped the other half with some crushed grahams and chopped cashews. Pretty aren't they?

MOCHI DOUGHNUTS RECIPE

​​Ingredients:
  • 1 cup all-purpose flour
  • 3/4 cup glutinous rice flour
  • 1 tsp baking powder
  • 1/3 cup sugar
  • 4 oz / 100g soft tofu
  • 1 large egg
  • 1-2 tbsp water, if needed
For Coating:
  • 1 cup white chocolate chips plus more for decoration
  • 1/2 cup semi-sweet chocolate chips
  • 3/4 cup heavy whipping cream
  • 1 tsp matcha powder
  • 1/2- 1 tsp ube flavor
​​Procedure:
  • In a large bowl, combine all-purpose flour, glutinous rice flour, baking powder and sugar. 
  • Add egg and tofu. Mix well until it forms a dough. If the mixture is too dry, add 1-2 tbsp water. 
  • Form the dough into a ball then divide into 8 equal pieces. (Like slicing a pizza). 
  • Take one piece of dough, roll into a ball then divide again into 8 equal pieces. Roll each piece into a ball. Arrange the 8 pieces of dough balls on a 4 x4 parchment paper to make a ring leaving no space in between.
  • Drop one or two dough rings in hot oil with parchment paper attached. Fry for about 20-30 seconds, then remove the parchment paper. Flip the dough ring and move around for even frying. Fry until golden. Remove from oil then drain on paper towels. Fry remaining dough rings. Let cool completely.
Matcha Frosting :
  • In a pan heat 1/4 cup whipping cream. Do not boil. Remove from heat before it simmers.  Or microwave for about 30 seconds.  Pour warm whipping cream over a bowl with 1/2 cup white chocolate chips. Stir with a spatula until melted. Switch to a whisk and continue stirring until smooth. Add matcha powder and stir until well combined.  Dip one side of the dough ring until evenly coated. Remove and swirl to allow excess coating to drip. Transfer to a rack with tray a the bottom. 
Ube Frosting: 
  • Same with the process with the Macha Coating. Instead of adding matcha powder, add ube flavor and stir until well combined.  Coat the dough rings. 
Chocolate Frosting:
  • Same process with heating the whipping cream then pour over a bowl with 1/2 cup chocolate chips. Stir until melted. Dip the dough rings until evenly coated.
Decorate:
  • Using a double boiler or microwave melt white chocolate. Stir until smooth. Transfer to a piping bag or ziploc and cut the tip leaving a very small hole. Pipe on half side of the coated donuts. 
  • Optional: sprinkle some crushed graham or digestive biscuits and or chopped nuts on the other half of the donut. 
  • Serve immediately and consume the same day.
  • Recipe yields 8 Mochi Donuts.
