NO-BAKE CHOCOLATE CAKE

Would you believe that this cake has only three ingredients? Whaaat? Yes, just three... okay plus the frosting is total of 5 ingredients. But I am talking about the cake itself. Really, just three and I can't believe how good this cake is. It looks sweet but it is not sweet at all even with added frosting. 
I found this recipe on YouTube but I made some modifications on how to prepare it as there are some ways to cook the cake aside from baking it and I'd like to show you other options to prepare it as well. This recipe is great for my followers from the Philippines who doesn't own an oven and are not pro when it comes to making cakes. So, if you are a beginner, then this cake is great for you.

This 3-ingredient Chocolate Cake is the easiest cake and one of the most delicious moist cake you can make. All you need are Oreo cookies, milk and baking powder. You can serve the cake as it is or you can use any frosting you like. For this one, I made chocolate ganache using whipping cream and semi-sweet chocolate chips.
So simple and very easy to prepare and can be done in no time! If you are in a hurry to make a cake, without much needed preparation, make this one. You won't regret it! Just take note that this is a small cake. One layer 6-inch cake so feel free to double and make a two layer cake if desired.

no-bake chocolate cake with chocolate ganache recipe

Ingredients:
  • 28 pairs of Oreo cookies
  • 1 cup warm 2% or whole/fresh milk
  • 1 tsp baking powder
Chocolate Ganache
  •  1 cup semi-sweet chocolate chips
  • 1 cup heavy cream or whipping cream
  • chocolate shavings for decoration

Procedure:
  • Split the Oreo cookies into two and scrape off the white cream filling. Do not discard the cream. 
  • Crush the Oreo cookies using a blender or pulse on a food processor. You can also place the cookies in a Ziploc bag and crush them using a rolling pin or wine bottle. Make sure to make fine crumbs.
  • In a medium bowl, combine crushed Oreo cookies,  baking powder and warm milk. Stir or whisk until smooth. Add the cream and whisk until well combined and the batter is smooth. 
  • Transfer the cake batter into a 6-inch pan greased with butter or oil. 
Two ways to make this cake:
  • Using a stovetop: Place a small round steel rack on a medium cooking pot. Turn on heat to medium-low. Place the pan with cake batter on the steel rack and cover the pot. Cook for about 1 hour or until a toothpick inserted on the center comes out clean.  Make sure the pot lid doesn't have a hole in it. If it does, make sure to fill the hole with a piece of cloth or parchment paper.
  • Using a steamer: Cover the pan with foil and place it on a steamer tray. Cover and steam for about 45 minutes or until a toothpick inserted on the center comes out clean. 
  • Let cool then invert on a cooling rack to cool completely.​

For the Chocolate Ganache:
  • In a small saucepan, add whipping cream. Let it come to a light simmer. Do not boil. Remove from heat and pour over 1 cup of chocolate chips. Let stand for 1 minute then stir lightly until mixture is very smooth. Let it sit for few minutes or until desired thickness is achieved. 
  • Transfer the chocolate ganache into a cup with a pout and pour over all over the cake starting from the top all the way to the sides. Make sure that the rack has a tray underneath. 
  • Decorate as desired. Slice and serve.

​Recipe Notes:
  • Warm up the milk by microwaving for one minute or heat up on a stove. Warm milk makes it easier for the Oreo crumbs to melt. This gives a smooth cake batter. 
  • If you have a blender, you can toss all of the ingredients and blend until smooth. 
  • Make sure the pot lid doesn't have a hole on it. If it does, make sure to fill the hole with a piece of cloth or parchment paper. This ensures a consistent heat inside the pot.
  • To make chocolate shavings, use a peeler and make long strokes to shave a chocolate bar or almond bark.  I used almond bark for the shavings. It is not sweet and I love using it for cake decorations. But you can use any chocolate bars you like.
  • For the chocolate ganache, this 1:1 ratio of cream and chocolates chips will produce a thin frosting but as it sits on the counter and cools down, a bit, it will start to thicken so you have to check if for the consistency. If it happens to thicken and you forgot about it, you can microwave it for few seconds and stir.  
  • If you'd like to bake this cake instead, bake in a preheated oven at 350F for about 45 minutes or until toothpick inserted comes out clean. Make sure to check before the set time as oven temperature varies.
