NO-BAKE CREMA DE FRUTA CAKE

Crema de Fruta is one of the easiest homemade cake you can make! It has layers of graham crackers and custard filling topped with fruit cocktail or any fruits that you like. It has gelatin on top that makes it an elegant cake to serve during parties or holidays like Christmas.
​This beautiful cake is actually my mom's recipe. The first time I made this was when I was in Philippines way back in 2001. Yes, almost 2 decades ago and I cannot count how many times I made this. Everyone who tries it, is amused how delicious this cake is.

Graham cracker is a sweet flavored crackers that's perfect as a base for a no-bake cake or a perfect snack on the go. I've tried three different brands which are the Nabisco, La Pacita and MY San. For some reason, I like the last two brands better then Nabisco.  They are crunchy and has delicate sweet honey taste. I highly suggest to use these two brands if available. The custard I made for the filling is made from egg yolks, water, milk, flour, butter and vanilla. Easy to prepare. Just combine them in a sauce a pan and cook until it thickens. Then top with the prepared gelatin.

For the gelatin, I did not add here the exact measurements. Because different brands require different water dilution. Just make sure to follow the label and use clear gelatin powder. I made mine firmer which I means I added less water as required which is also noted in the label. How much depends on how thick or think you want the gelatin top would be. NO-BAKE CREMA DE FRUTA RECIPE

Ingredients:
  • 1/2 cup all-purpose flour
  • 3/4 cup sugar
  • 1 can (12 oz) evaporated milk 
  • 1 cup water
  • 6 egg yolks, beaten
  • 2-3 tbsp melted butter
  • 1 tsp vanilla 
  • graham crackers
  • unflavored clear gelatin
  • fruit cocktail and/or peaches, pineapples, etc.

Procedure:
  • In a medium saucepan, combine flour, sugar, water, evaporated milk, egg yolks, and butter in a saucepan until well mixed. 
  • Simmer over low heat while stirring constantly until the mixture thickens. Remove from heat. Let cool. Make sure to stir while cooling to avoid the top from drying. 
  • Arrange the first layer of graham crackers in an 8 x 8 square pan.
  • Spread the prepared mixture over the graham crackers.
  • Top the mixture with another layer of graham crackers. Repeat until 3 to 4 layers depending on your size preference. I made 3 layers for this recipe. 
  • Top with fruit cocktail and/or peaches. 
  • In a small saucepan, prepare the gelatin as instructed in the label and pour it over the graham and fruit layer. 
  • Let it cool and refrigerate. This cake is best served when chilled.

Hi Janette! There are so many recipes that I wanted to try from your website but I find them hard to print. Thank you for making your latest recipes printable. I wish you can do that also to your old recipes. Stay safe and God bless from your big fan in the Philippines!

Hi Ms. Ellen. I am working on doing that to other recipes as well. I am just busy adding new recipes as much as possible. Video editing just takes so much of my time kaya I try to slowly to do that option sa ibang recipes din. But did you know that you can bookmark a web page so you can save on printing?

Anyway, I am glad that you have been wanting to try my recipes here. May I ask what have you tried so far?
