Pinipig Ice Candy

Ice candies are a common refreshing treat during summer in the Philippines. One of the easiest and delicious cold dessert that kids and adults enjoy eating. An inexpensive treat to beat the heat!
You probably haven't heard about Pinipig Ice Candy and maybe there are just a few recipes for this circulating the internet. Not a common flavor but one of the best I've tasted so far.  I grew up eating this flavor because my mom used to make this for us and this is my favorite flavor.

What is Pinipig? Pinipig are immature grains of glutinous rice pounded until flat before being toasted. It is commonly used as toppings for various desserts in Philippine cuisine, but can also be eaten plain, made into cakes, or mixed with drinks and other dishes. Here in the US, they are available in many Asian stores. 
On this recipe, the pinipig is toasted to give the ice candy a subtle flavor when mixed with coconut  milk. ​Try it! Super easy to make and delicious!

PINIPIG ICE CANDY RECIPE

Ingredients:
  • 2 cups coconut milk
  • 1 cup water
  • 1 cup sugar*
  • 1 cup pinipig
* Adjust according to preference

Procedure:
  • In a pan, toast pinipig over medium heat until color turns golden. 
  • In a large bowl,  combine coconut milk, water and sugar. Stir until sugar is fully dissolved.
  • Using a funnel add desired amount of pinipig and pour blended mixture in an ice candy bag. ( I used 1 1/2" x  10") and knot closed.  
  • Repeat with remaining buko pandan mixture. 
  • Freeze overnight before serving.
  • Recipe yields about 12-15 ice candies.
