Ube Cheese Ice Candy

In the Philippines we love anything with Ube. Not only because of its vibrant color but because of the subtle flavor it gives to the food. Be it a rice cake, ice cream and even ice candy! Yes, Ube Ice Candy is another dessert you will definitely enjoy.
​On this recipe, it's not only ube that you will taste. The coconut milk and the cheese makes this cold treat the best!
And, there's no need to make ube jam for this recipe. I do not suggest it either, or else your ice candy's texture will be a little grainy. The ube extract made by McCormick is enough to give this dessert the ube flavor you need.

For the ice candy bags, they are available every where in the Philippines but if you are in another country, maybe Asian stores carry them and if not, online might be the only option. I saw two kinds that Amazon is selling. On this recipe, the size of the bag is 1 1/2 "x 10". Amazon has 2" x 12" ice candy bags also called popsicle bags that is similar to what we use. They also have another kind ice candy pops that has zip seals so there's no need to knot them tightly. It also comes with a free funnel.

ube cheese ica candy recipe

  • 2 cups coconut milk
  • 1 cup water
  • 1 cup sugar
  • 2 tsp ube flavor extract
  • grated cheddar cheese

Procedure:​
  • In a large bowl,  combine coconut milk, water, sugar and ube extract. Stir until sugar is fully dissolved.
  • Add desired amount of grated cheese inside the ice candy bag. 
  • Using a funnel, pour blended mixture in an ice candy bag ( I used 1 1/2" x  10") with cheese and knot tightly closed.  
  • Repeat with remaining mixture. 
  • Freeze overnight before serving.
  • Recipe yields about 12-15 ice candies.
