BInagoongan Baboy sa gata or Pork Binagoongan in coconut milk is Pork belly cooked in shrimp paste. Traditionally cooked without coconut milk but this version has one that makes it more delicious and flavorful.  One of the most famous Filipino recipe.

This dish is best served with fried eggplants, fried fish and hot steamed white rice. Don't forget to add chilies to give it a little spicy kick. Try this dish and let me know what you think. Comment box is located below.

Pork BInagoongan with coconut milk recipe

Ingredients:
  • 1 lb pork belly, cut into strips
  • 4-5 cloves garlic, chopped
  • 1 small onion, minced
  • 2 tomatoes, sliced
  • 1/4 cup shrimp paste
  • 1/2 cup water
  • 1 tsp sugar
  • 1 1/2 tbsp vinegar
  • 1 can, 15oz  coconut milk
  • 2 eggplant, sliced diagonally + 2-3 eggplants, sliced and fried for serving
  • chili peppers, optional

Procedure:​
  • Pour a small amount o oil into a hot pan.
  • Add the pork strips and cook until sides turn brown.
  • Using the same pan, sauté garlic until fragrant.
  • Add onions and cook until translucent.
  • Add tomatoes and cook until softened. 
  • Add shirmp paste (bagoong). Simmer for 2-3 minutes.
  • Add the pork pieces, water and sugar. Stir.
  • Add vinegar. Do not stir.  Let it boil. 
  • Add the sliced eggplants and coconut milk. Simmer until sauce is thickened and reduced.
  • Season with pepper to taste. 
  • Add the chili pepper if desired.
  • Serve with fried eggplant and hot steamed white rice. 
  • Enjoy.
