Embutido is a Filipino style meatloaf that is traditionally served during holidays but can also be enjoyed as regular daily dish when paired with hot steamed rice.
Pork Embudito is made from ground pork, carrot,s raisins, bell pepper, tomato sauce, pickle relish, onions, bread crumbs, salt and pepper and a little bit of all purpose flour to serve as a a binder.  It is also topped with sausage and had boiled eggs before rolling to give it a nice presentation when serving.

​Filipinos love banana ketchup as a dipping sauce and this is the perfect sauce for Embutido. Some serve it as it is after being refrigerated for few hours.  Some likes to fry them individually. It can also warmed up in a microwave for 1 to 1.5 minutes before serving. It will up to you how you want it served.

Ingredients:
  • 1 lb ground pork 
  • 2 pieces raw eggs
  • 1/4 cup tomato sauce
  • 1/4 cup sweet pickle relish
  • 1/4 cup carrots (minced)
  • 1/4 cup red bell pepper (minced)
  • 1/2-3/4 cup raisins 
  • 1/4 cup onion, minced
  • 2 pieces hard boiled eggs (sliced)
  • 5-6 pieces vienna sausage or red hotdogs (cut in half lengthwise)
  • 3/4 cup bread crumbs
  • 1/4 cup all purpose flour
  • 1​ tsp salt 
  • 1/4 tsp ground pepper

Procedure:
  • Combine all ingredients in a large bowl. Mix thoroughly until well incorporated.
  • Spread the mixture on aluminum foil.
  • Arrange the sausages, hard-boiled eggs alternately on top of the flat mixture. 
  • Shape into a roll about 5-6 inches in diameter and wrap in foil. Secure the edges.
  • Steam for 1 hour. 
  • Remove from the steamer and let it cool.
  • Refrigerate for at least 4 hours.
  • Unwrap and slice before serving with  banana ketchup.
  • You can microwave the sliced embutido for 1 minute. They can also be fried. It's up to you. :)
  • Enjoy!
  • Recipe makes about 4-5 rolls.

Can we substitute chorizo de Bilbao instead of Vienna sausage, or omit it all together?
