purple sweet potato rice cake

Purple Sweet Potato Rice Cake is fried glutinous rice flour with ube jam filling rolled in sesame seeds. This recipe is inspired how we make Palitaw and Sesame Balls (Buchi) so my niece and I decided to create one that is a combination of both. It is very easy to make, not too sweet and delicious!

For this recipe, you can use a ready made Halaya or Ube Jam but you can also make it from scratch if you like.

purple sweet potato rice cake

Ingredients:
  • 1 cup purple yam, boiled and mashed
  • 8 tbsp sugar
  • 2 tbsp condensed milk
  • 1 cup glutinous rice flour
  • 1/2 cup water
  • 1/2 tsp ube flavor (optional)

Procedure:
  • Combine yam, 4 tbsp sugar and condensed milk
  • Shape into round balls. Set aside.
  • Combine glutinous rice flour, 4 tbsp sugar and water. Adjust the flour and water accordingly. (Mixture cannot be too dry or too sticky.) 
  • Scoop dough then flatten each dough with your fingers to make a round shape.
  • Place about purple yam ball on the center.
  • Gather all the sides and pinch together. Seal well. 
  • Press with the palm of your hand to make a round flat shape.
  • Press the shaped dough against the sesame seeds. 
  • Heat a pan with a small amount of cooking oil.
  • Pan fry until sides are brown.
  • Serve alone or with sweetened coconut flakes or fresh grated coconut with sugar. 
  • Enjoy.

Can I bake instead of pan fry.

I haven't tried baking it. I think you can steam it but you may want to brown the sides. If you do bake, I am not sure about the temperature as they are a bit thin.
