UBE BANANA LANGKA TURON

Turon or Banana Roll is one of the most famous Filipino desserts and the most common street food you can find in the Philippines. It's because this dessert is so delicious and saba or cooking banana is one of the most important banana varieties in Philippine cuisine.
The traditional Turon is made of banana wrapped in the lumpia wrapper, pan-fried in oil with brown sugar. But, this recipe is special because it is made of banana, langka (jackfruit) and ube halaya/jam.  Combining those three makes it like Gourmet Turon. Not only that, the coating is different as well.

I adopted this special sweet coating from the other Banana Roll  I shared in the past which is actually my niece's Banana Rhuma Recipe.
​This Caramelized Pineapple Rum Sauce with cinnamon and langka is very delicious. Made of butter, langka, cinnamon, pineapple juice, rum and brown sugar then simmered the sauce until thick and coated the fried banana rolls. So delicious!
​Just a quick tip, a quick dunk is advised. Do not soak it in sauce or it will be soggy. Once coated, immediately remove from the sauce. This method will retain the Turon's crispiness.

What you can also do is just drizzle some sauce over the fried turon. Either way, it works. Anyway, the langka or jackfruit I used here is the store-bought sweetened langka in a bottle. You can also use raw if you like.
For the rum, you can use any kind or you can even omit it you don't have one. And for the ube jam, you can make your own Ube Halaya or use store-bought Ube Jam in a bottle. Please give this recipe a try and let me know what you think by leaving a comment below. Enjoy!

UBE BANANA LANGKA TURON RECIPE

Ingredients:
  • 4-8 large saba banana
  • 1/4 cup plus more langka strips
  • ube halaya / jam
  • lumpia / spring roll wrapper
Caramel Coating:
  • 1/3 cup butter or margarine
  • 1/4 cup langka (jackfruit) strips
  • 1/4 tsp cinnamon powder
  • 1 tbsp rum
  • 1/2 cup pineapple juice
  • 1/2 cup brown sugar

Procedure:
  • ​Slice each banana into 4 pieces (lengthwise). The saba banana I got are large so I sliced them into four. If using small, just slice it in half. 
  • Lay the wrapper flat on a clean surface with one corner or edge facing or pointing towards you. 
  • Place one piece sliced banana, about 3-4 langka strips and 1-2 tbsp ube jam then add another piece of banana. Roll it up then fold both sides towards the middle then tuck in both ends, roll tightly until 2 inches of wrapper remain. Brush or moisten with water to seal the edges and finish rolling. Repeat the process on remaining banana. 
  • Heat cooking in a deep pan and drop the lumpia in hot oil. Do not overcrowd the pan. Fry until crispy and golden. Remove from oil and drain. Set aside. 
  • In a separate pan or wok, melt margarine or butter. Add langka, cinnamon powder and rum. Cook for about 2 minutes. Add pineapple juice and let it boil then add brown sugar. Continue cooking until sugar caramelizes and sauce is thick.
  • Add the fried banana rolls and quickly toss until evenly coated. Immediately remove the pan.  Serve while warm. Enjoy!
