Blueberry Banana Loaf Bread

If you love Banana Bread like I do, why not add more flavor by adding blueberries? Once you do, you will be amazed how good it is. This Blueberry Banana Loaf Bread is very moist and loaded with lots of blueberry flavor.

I used my Easy Banana Bread recipe to make the batter (I cut the recipe in half to make one loaf) and filled fresh blueberries that I cooked with sugar. I added the mixture in the middle and on top, made a swirl to combine it with the batter to create a swirl effect.  It looks lovely! Super easy to make and delicious!

If you can't find fresh blueberries or find it expensive, you can use store-bought blueberry pie filling in can. I haven't tried it but I don't see a reason why you can't. But me personally, I love the fresh ones. If you have extra blueberries, I suggest to make my Blueberry Muffins. It's another easy recipe I know for sure you will love. And more suggestions below. Blueberry Banana Loaf Bread

Ingredients:
  • ​ 1 cup fresh blueberries
  • 1 tbsp sugar + 3/4 cup, divided
  • 1 1/2 cups  all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup evaporated milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 large egg, room temperature
  • 3/4 cup mashed banana, 2 medium bananas
  • extra sugar for dusting

Procedure:
  • Preheat oven to 350 F. Grease a 9 x 5 loaf pan and set aside.
  • In a saucepan, combine 1 cup blueberries and 1 tbsp sugar. Cook over medium heat until blueberries start to soften. Mash with a spoon and cook until sauce slightly thickens. Remove from heat and let it cool.
  • In a large bowl combine flour, sugar, baking soda, baking powder and salt. Stir until incorporated.
  • Add milk, butter, egg and vanilla. Beat or whisk together until just combined the stir in bananas. Do not over-mix.
  • Transfer half of the batter to the prepared pan. Add half of the blueberry mixture on top and swirl using a toothpick to combine. Add the remaining batter and top with the remaining blueberry mixture. Repeat the swirl effect.
  • Sprinkle some white sugar on top. 
  • Bake in a preheated oven for 50 to 1 hour or until the middle part is no longer gooey or toothpick inserted comes out clean. 
  • Remove from the oven and allow to cool down for 5-10 minutes. Remove from pan and transfer to a cooling rack. Slice, serve and enjoy with hot tea or coffee.
