​Chicken Afritada is a type of stew consisting of chicken and vegetables simmered in tomato sauce. A common everyday Filipino meal that is usually served with hot steamed white rice. 

Ingredients on this recipe are chicken cuts, minced garlic, minced onion, diced carrots, diced bell peppers, diced potatoes, green peas and a can of tomato sauce. I love using fish sauce every time I saute' my meat but you can use regular salt if you prefer.

When cooking, I always pan fry the vegetables first especially the carrots and potatoes to make sure they are half way done then add them at the end of the cooking process until they are fully cooked. To read the full instructions, please continue to scroll down.

​​INGREDIENTS:
  • 1 1/2 lbs chicken, cut into serving size
  • 1 large potato, chunks
  • 1 large carrot, chunks
  • 1 medium red bell pepper, chunks
  • 1 medium onion, chunks
  • 1/2 cup green peas
  • 4-6 cloves garlic, minced
  • 1 can 8 oz tomato sauce
  • 1 1/4 cups water
  • 1 tbsp fish sauce
  • salt to taste

HOW TO COOK CHICKEN AFRITADA:
  • Heat cooking oil in a pan or wok. 
  • Saute potatoes, carrots and bell pepper.  Cook until half cooked.  Drain on paper towels. Set aside. 
  • Using the same pan, saute garlic then add onion. Cook until onion is translucent. 
  • Add the chicken cuts***. Simmer for 10-15 minutes or until tender. (requires occasional stirring).
  • Add the fish sauce and cook for 3 minutes. 
  • Add water when it starts to dry up. Bring to a boil.
  • Add the tomato sauce. Let it simmer. 
  • Add all the vegetables. Simmer for another 5 minutes or until the carrots and potatoes are tender. 
  • Remove from heat & transfer to a serving bowl.
  • Serve with hot steamed white rice. 
  • Enjoy!
*** You can also boil the chicken and use the chicken stock instead of water.***
