​Higadillo is a pork and liver stew cooked in mixture composed of vinegar and lechon sauce. This delicious Filipino dish is best served with hot steamed white rice.

The sauce should be a balance between sweet, sour and liver sauce so we need a right portioning of sugar, vinegar, water and Sarsa ni Mang Thomas (ready made liver sauce in a bottle).

higadillo recipe 

INGREDIENTS:
  • 2 lbs pork belly, cut into strips
  • 1 medium onion, minced
  • 2 medium tomatoes, sliced
  • 5 cloves garlic, minced
  • 1/2 cup pork or beef liver, cut into strips 
  • 1/2 cup water
  • 2 tbsp sugar 
  • 2 tbsp vinegar 
  • 1 cup all purpose sauce (Sarsa ni Mang Tomas)
  • 1 tbsp fish sauce, adjust according to taste
  • 2 pieces bay leaves
  • cooking oil for sauteing ​​​

​HOW TO COOK:
  • Heat cooking oil in a pan or wok. 
  • Saute garlic, onion and tomatoes.  
  • Add the pork. Cook for 5 minutes or until color turns light brown.
  • Add liver. Stir to combine.
  • Simmer for 10 minutes or until the pork & liver becomes tender. 
  • Add the fish sauce and cook for few minutes.
  • Add water and vinegar. Do not stir. Simmer for 5 minutes.
  • Add sugar and all purpose sauce. Simmer for 10 minutes or until the sauce becomes slightly thick.
  • Remove from heat and transfer to a serving bowl.
  • Serve with hot steamed white rice.
  • Enjoy!
