Higadillo is a pork and liver stew cooked in mixture composed of vinegar and lechon sauce. This delicious Filipino dish is best served with hot steamed white rice.
The sauce should be a balance between sweet, sour and liver sauce so we need a right portioning of sugar, vinegar, water and Sarsa ni Mang Thomas (ready made liver sauce in a bottle).
