2-layer FRUIT COCKTAIL JELLY

​Impress your family and friends with this homemade Fruit Cocktail Jelly. 
Another colorful treat you can easily make. P
erfect for cooling down from a hot day or a great dessert you can serve at a party or potlucks. You can also serve it as an after meal fruit dessert. I know for sure you will enjoy every bite of this delicious dessert. 
For this recipe. you can use any container you have available like Llanera or flan molds. 
Make sure to refrigerate before serving though. The best!

I used Mr. Gulaman brand for the gelatin powder. Make sure that if you will be using other brands, follow the packaging directions on water requirement and dilution. Brands vary on preparation like using hot water or cold water to dissolve the powder so take note on that.
For Mr. Gulaman, just so you know that it requires 6 cups of tap water for the whole 1 pack which is 26 grams powder. The lesser the water the firmer the gelatin will be.

FRUIT COCKTAIL JELLY RECIPE

Ingredients:
  • 1 large can, 815g fruit cocktail
  • 1 can, 14oz evaporated milk
  • 1 can, 12oz condensed milk
  • 2 -1/2 cups water
  • 1 pack 25g unflavored clear gelatin powder 
Gelatin Topping:
  • 2 -1/2 cups water 
  • 1 tbsp unflavored clear gelatin powder

Procedure:
  • In a medium bowl, drain canned fruit cocktail. Set aside the fruits leaving the syrup in the bowl.
  • Combine the syrup, evaporated milk and condensed milk. Whisk until well combined. Set aside.
  • In a pot, dissolve gelatin powder in water. Cook over medium heat while stirring constantly. 
  • Add the milk mixture and continue stirring. Cook until mixture is steaming hot (not boiling).
  • Transfer into the molds. I used two 9x5 loaf pans. Let it set for about an hour then add fruit cocktail on top.  Set aside. 
  • In a small saucepan, dissolve gelatin in water.  Heat while stirring constantly and bring to a light simmer. Remove from heat and let the temperature cool down for about 2-3 minutes. 
  • Pour the warm gelatin syrup over the fruit cocktail. Let it cool to set and refrigerate. before serving.

RECIPE NOTES:

  • I used Mr. Hat Gulaman brand for this recipe. If using other brand, please make sure to follow package directions. Brands vary on water requirements so make adjustments if needed.
  • Leftover Fruit Cocktail Jelly can be placed in an airtight container and be stored in the refrigerator for about 1 week or so. ​
