Papaya Jelly cake

​Looking for a recipe using papaya? Here's one for you made from fresh papaya that is pureed and mixed with gelatin. The bottom white layer is made with creamy milk mixture to balance the taste with the top layer. This Papaya Jelly Cake is delicious and fun to make. A great dessert you can serve for parties and other occasions.
​Please note that Mr. Gulaman brand was used to make this recipe. If using other brand, please make sure to follow packaging directions on dilution and use your best judgement to adjust.

You can use any gelatin mold or container you like but I think bundt pan is a great way to serve it. It looks very elegant and the color is so vibrant when paired with the white. A homemade treat kids and adults will enjoy!

​I have other recipes with gelatin namely Cathedral Window, Maja Jelly, Jelly Flan and Fruit Cocktail Jelly. I highly suggest to try them.  They are as good as this one.

papaya jelly cake recipe

Ingredients:
  • about 3 cups fresh papaya, sliced, makes 1 cup papaya puree
  • 2 packs, 25 grams each clear unflavored gelatin powder
  • 3 cups + 2 cups water
  • 1/2  cup + 1/4 cup sugar
  • 3/4 cup evaporated milk
  • 1/2 cup condensed milk
  • 1/2 cup heavy cream or all purpose cream
Note: Mr. Gulaman brand was used to make this recipe. If using other brand, please make sure to follow packaging instructions and dilution requirements.

Procedure:
  • Prepare about 3 cups sliced fresh papaya. Use a food processor or a blender and pulse until smooth. Makes 1 cup papaya puree.
  • In a large bowl, stir together 3 cups water, 1 pack gelatin powder and 1/2 cup sugar. Mix until gelatin and sugar are dissolved.
  • Add papaya puree. Stir until well combined. Transfer into a cooking pot and turn heat to medium. Cook the mixture while stirring continuously until steaming hot (not boiling). Transfer into a pan or molder. Let it cool to set. (I used bundt pan and two small gelatin molds for the extra mixture.)
  • In a bowl, stir together 2 cups water, 1 pack gelatin powder and 1/4 cup sugar. Mix until gelatin and sugar are dissolved.
  • Add evaporated milk, condensed milk and cream. Mix until well combined. Transfer into a cooking pot. Turn the heat to medium and cook the mixture while stirring continuously until steaming hot (not boiling). Pour over the cooled papaya layer. 
  • Cool completely and refrigerate for at least 4 hours.
  • Serve and enjoy!
