Mini Banana BREAD Loaves

There are so many recipes you can make with overripe bananas. I have used it countless times in many of my recipes. Who doesn't right? But for Banana Bread, I always use this recipe. It is fail proof as I have used this for my BANANA MUFFINS, CREAM CHEESE BANANA BREAD, EASY BANANA LOAF BREAD and more. It is very soft and moist. Super easy to make and delicious! 
This time I made mini loaves. I only used this pan when I made my KOREAN EGG BREAD so I thought of using it again and make these cuties then topped with nuts and chocolate chips.

For the toppings, you can use anything that you like. Here, I just used whatever I have available in my pantry. I  coarsely chopped walnuts and almonds. I also have chocolate chips and sliced almonds. You can also make your own toppings and drizzle with glaze, melted chocolate, ganache, cream cheese and more. It's endless! These mini loaves can also be given as a gift (placed in a box- photos below) or can be sold. I promise your customers will be happy.
If you'd like to add more toppings, you can but I suggest to take it easy especially the chocolate chips as it can be too sweet unless you adjust the sugar on the cake batter. Nuts are okay though. :)

Tips:
  • Add more toppings if you like. It tends to look like there are less toppings after baking as the cake expands and the topping separates. 
  • Sugar can be adjusted according to your preference. If you will be adding all chocolates on top, you can add 1/2 cup of sugar instead of 3/4 cup. 
Where to get this mini loaf pan?  I got this from Amazon, link here 8 2.5x4-inch loaf pan. If you are in the Philippines, this should be available at your baking supply store like the below box for your goodies.

MINI BANANA LOAVES

Ingredients:
  • 1-1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup evaporated milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 whole egg, room temperature
  • 3/4 cup mashed banana

Procedure:
  • Preheat oven to 350 F. Grease an 8 2.5x4-inch loaf pan. 
  • In a mixing bowl, combine flour, sugar, baking powder, baking soda and salt.
  • Add milk, butter, egg and vanilla  then the mashed bananas. Stir to combine. Do not overmix. 
  • Transfer and divide mixture to the prepared pan. Top with your favorite nuts and chocolate chips. For this recipe, I used sliced almonds, semi-sweet chocolate chips, white chocolate chips, walnuts and chopped almonds. 
  • Place in the middle rack of the oven and bake for 25-30 minutes or until the middle part is no longer gooey or toothpick inserted at the center comes out clean. (Please read my tips below).
  • Remove from the oven and allow to cool down in pan on wire rack for about 5 minutes.
  • Remove from pan and transfer to a cooling rack.
  • Recipe yields 8 mini loaves.
  • Make sure to read my NOTES AND TIPS below. 


NOTES AND TIPS:

  • Add more toppings if you like. It tends to like there are less toppings after baking as the cake expands and the topping separates. 
  • Sugar can be adjusted according to your preference. If you will be adding all chocolates on top, you can add 1/2 cup of sugar instead of 3/4 cup. 
  • Baking times will vary based on moisture content of bananas, climate, and oven variances. You need to bake this until done — watch your bread, not the clock. 
  • Recipe yields 8 pieces. Feel free to double the recipe if you'd like to make 16 Mini Banana Loaves.
  • If you have extra overripe bananas, wrap them individually (skin on) with plastic food wrap and freeze. Just thaw when ready to use.
