Ube Puto with Cheese

Adding ube (purple yam) is a great way to flavor puto (Filipino muffin). I have made different recipes for puto using cake flour, self-raising flour and rice flour. This time I thought of making it easier by using pancake mix. It makes the puto soft and fluffy. But the key is to get a good brand of pancake or waffle mix. I suggest to use the brand Bisquick baking mix.   

I acquired this recipe from my Bisquick Muffins  recipe and added ube jam and ube extract to give it a nice ube flavor. You can make the Ube Jam from scratch if you like or purchase a ready madeube jam in a bottle.

UBE PUTO WITH CHEESE recipe

Ingredients:
  • 3 cups pancake mix, use Bisquick if available
  • 1 1/2 cups sugar​
  • 3 eggs
  • 1 cup fresh/whole milk
  • 1 tsp vanilla extract
  • 1/4 cup butter, melted
  • 1/4 cup ube halaya / ube jam
  • 1/2 tbsp ube extract/flavor, adjust according to color preference
  • sliced cheese for topping

Procedure:
  • Grease puto molds or line with paper cups.
  • Prepare the steamer by bringing water to a boil over medium heat.
  • ​In a medium bowl, stir together pancake mix and sugar. Set aside. 
  • In a large bowl, whisk together eggs, milk, vanilla extract and butter. 
  • Gradually add the dry ingredients into the wet ingredients. Stir until fully incorporated.
  • Stir-in ube jam and ube extract. 
  • Pour or fill the mixture in the prepared molds (at least 2/3) and top with sliced cheese.
  • Place the molds into a steamer.
  • Cover the top withcheesecloth to avoid water drips.
  • Steam for 15 minutes or until toothpick inserted comes out clean.
  • Best served when warm. ​

Hello. What can I use if I don't have cheesecloth?

Kitchen towel will work to cover your steamer lid.
