PEANUT BUTTER BANANA BROWNIES

Every time I have overripe bananas, I am always passionate about what to make out of it. First, it's because I love anything with bananas. Second, overripe bananas with lots of brown spots on its peel are so easy to mash and they are so sweet! They provide a natural sweetener to many desserts and baked recipes that's why I like using them. 
I have done so many recipes out of overripe bananas and here's the list in case you'd like to try them out as well.

Anyway, I found this recipe on google and I've seen many websites having the same ingredients, so I thought of just creating my own version. By far, I would say that this is one of the best brownie recipes I've baked. It's just so moist, gooey and not overly sweet! Aside from that, it is so easy to make!

All you need is a medium bowl, whisk, spatula and an 8x8 or 9x9 baking pan. Mash the bananas there then add the sugar and still well. Add the melted butter, vanilla, salt and cocoa powder. Stir until well incorporated then add flour. Mix until just combined then stir in the chocolate chips. Transfer the mixture into an 8x8 pan lined with parchment paper. Top with blobs of peanut butter, swirl then add some chocolate chips and bake!

The bananas made this cake Brownie so moist, and the peanut butter is perfect with the chocolate. Now I regret why I only added a little bit of peanut butter. Ha-ha! And if you look at this brownie, you might be thinking they are sweet. Nope they are actually not! I adjusted the sugar since we are adding bananas anyway and I didn't add a lot of chocolate chips either. Besides, I only used semi-sweet chocolate chips here.

But please know that you can actually omit the chocolate chips if you like. For the peanut butter, I suggest adding more whatever your preference is. Tip? For easy swirling, you can microwave the peanut butter for about 15 seconds.

BANANA PEANUT BUTTER BROWNIES RECIPE

Ingredients:
  • 2 medium-large overripe bananas, about 3/4 to 1 cup when mashed
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1 /4 cup unsweetened cocoa powder
  • 3/4 cup all-purpose flour
  • 1/4 cup semi-sweet chocolate chips plus extra for topping
  • 1/2 cup creamy peanut butter

Procedure:
  • Preheat oven to 350F / 180C.
  • Grease an 8x8 or 9x9 baking pan with butter or line with parchment paper. 
  • In a large bowl, mash the banana really well then and sugar. Mix well.
  • Add melted butter, vanilla, salt and cocoa powder. Mix until well combined.
  • Incorporate the flour, do not over mix then add chocolate chips.
  • Pour the batter into the prepared pan.
  • Add blobs of peanut butter then make swirls using a knife.
  • Top with chocolate chips if desired.
  • Bake in a preheated oven on the middle rack for 40-45 minutes. Oven temp varies so make sure to check at 30 minutes. 
  • Remove from the oven and let cool completely in pan before serving.

RECIPE NOTES:

  • It is best to use overripe bananas with brown spots on its peel. The more spots the better because they are sweeter.
  • To make the peanut butter easy to swirl, microwave for about 15 seconds.
  • After cooling in pan, you can slice and serve immediately or chill in the refrigerator fist.
  • To slice, use a hot knife. That is by dipping the blade in hot water for few minutes then dry the blade. Make sure to warm the blade each time you cut.
