CHEESECAKE COOKIE BARS

Chocolate and cheesecake combined in one dessert is amazing. It's like a perfect marriage ha ha!  It has this crunchy bottom because of the cookie crust and chewy, gooey in the middle and top. It looks sweet but it just has the right sweetness to it.

The process to make this gem is not hard at all. Just combine flour, baking soda and salt in a bowl. Then in another bowl. cream the butter and sugars then add egg and vanilla. Add the flour mixture then stir-in chocolate chips. Press the 2/3 of the cookie dough onto the baking pan with parchment paper. In a small bowl. combine cream cheese, sugar, egg and vanilla. Beat until smooth then pour over the pan with cookie dough. Crumble the remaining cookie dough over the cream cheese then bake. 
Easy peasy! 

CHEESECAKE COOKIE BARS RECIPE

Ingredients:

• 2 cups all-purpose flour
• 1/2 tsp baking soda
• 1/2 tsp salt
• 2/3 cup unsalted butter, softened
• 1/2 cup granulated sugar
• 2/3 cup cup dark brown sugar
• 1 large egg, room temperature
• 1 tsp vanilla
• 1 1/2 to 2 cups ​semi-sweet chocolate chips

Filling:

• 8 oz, 226g cream cheese, softened
• 1/4 cup granulated sugar
• 1 large egg
• 1 tsp vanilla

Procedure:

• ​Preheat oven to 350F / 176C. Line an 8 x 8 or 9 x 9 pan with parchment paper greased with oil or butter.
• In a medium bowl, stir together flour, baking soda and salt. Set aside.
• In a large bowl, cream the butter. Add granulated sugar and brown sugar. Beat until light and fluffy. Add egg and vanilla. Beat until well incorporated. 
• Add flour mixture in two additions. Beat until well combined.  Stir-in semi-sweet chocolate chips. 
• Add 2/3 of cookie dough and press firmly against the bottom of the prepared pan. Set aside. 
• In a small bowl. beat cream cheese until creamy. 
• Add sugar and beat until well combined.
• Add egg and vanilla. Beat until smooth. Pour over prepared pan with cookie dough. Spread evenly.
• Add remaining cookie dough by tablespoons or crumble on top of the cheesecake mixture. 
• Bake in a preheated oven for 40 minutes or until top starts to turn golden. 
• Cool completely then chill before serving.
• Cut into bars. Store in the refrigerator. Enjoy!
