UBE CHEESECAKE BARS

Cheesecake Bar is another recipe you can easily make at home. They look elegant and taste so delicious! A treat that I know everyone will surely enjoy.
I was inspired to make this Ube Cheese Bar after making the Langka Cheesecake Bars. I gave some to my neighbor and they were amazed how good they were. They said, they like how the cake is not overly sweet. The texture is perfect. It has this soft and spongy cake base with creamy cheesecake on top. The swirl effect on top is what makes it look elegant and it is not hard to make at all.

It's very easy to make that beautiful swirl on top. What I did was, I reserved a small amount of mixture from the cake base, transferred  it in a piping bag, cut the tip and just piped it diagonally on top of the cheesecake. I used a clean toothpick or you an use a bamboo skewer as well and drag  the toothpick through the cake batter to get a pretty swirl. I suggest to see my video that I attached below. 
They key here is to not overly mix and overbake the cake. If you do, they will be hard and crumbly. If you follow this recipe to a T, you'll have soft, moist and spongy cake.

UBE CHEESECAKE BARS RECIPE

Ingredients:
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup ube jam/ube halaya
  • 1/2 tbsp-1 tbsp ube extract
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 8 oz cream cheese, softened at room temperature
  • 3 tbsp granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Procedure:
  • Preheat oven to 350F. Line an 8 x 8 baking pan with parchment paper and grease. Set aside. 
  • In a large bowl, combine butter and sugar. Beat until well combined. Add 2 eggs one at a time, beating well after each addition. Add ube jam/halaya and ube extract. Beat until well combined. 
  • Place a sieve over the mixing bowl and add flour, baking powder and salt. Sift then stir using a spatula just until combined. Do not overmix. Reserve about 1/3 cup cake batter and set aside. 
  • Pour the cake batter onto the prepared pan. Spread evenly then set aside.
  • In a medium bowl, beat cream cheese until creamy.  Add sugar and beat well. Add one egg and vanilla extract. Beat until mixture is smooth. Pour cream cheese mixture over the cake batter and spread evenly.
  • Transfer the reserved mixture into a piping bag. Cut the tip to make a small hole. Pipe the ube cake mixture diagonally onto the cream cheese mixture. Drag a clean toothpick or bamboo skewer through the cake batter to get a pretty swirl.
  • Bake for about 30 minutes or until the top is nearly set. Cool completely before serving.

​TIPS AND NOTES

  • A 6x6 square pan can also be used if you want a taller cheesecake bar. 
  • Store-bought Ube Jam in a bottle can also be used or make your own using my RECIPE.
  • If homemade Ube Jam has been in the fridge and if you'd like to make it spreadable again, you can heat it up using a double boiler and combine 1/4 cup butter and 1 cup ube jam. Heat until it softens and evenly combined. 
  • Make sure to check your oven before the set time. Oven temperature varies. This dessert is done as soon as cheesecake topping has just set. Do not overbake or the cake will be dry. 
  • Store the Ube Cheesecake Bars in an air tight container. They can last for up to 5 or more days chilled in the fridge. Each bar can be warmed again in the microwave for about 10-12 seconds. The cake will be soft again.

On your ube cheesecake recipe you said bake until cream cheese settles how do I know when it settles? Sorry i have just started baking.

It's when the top is not wet anymore but not dry. If it's overbaked, the top will crack.

I tried your recipe - it's amazing, thank you for sharing! I would like to do it again and ship to friends & family to let them know I'm thinking about them during this pandemic. Do you know if it will keep well for about 3-5 days in transit? Has anyone tried doing this?

do you need to transfer it to a cooling rack? or just let it cool down on the tray?

Cool down on the tray for 5 minutes then transfer to a cooling rack to cool completely.

I tried it but the middle batter is still raw. Should i bake the yne. Ake a little but first before putting the cheesecake on top and bake it again?

It means it needs more time in the oven. No, you bake it all together. Fyi, 350F is 176C. Just making sure your oven temp is correct.

Just for clarification, it calls for 2 eggs and not 3. On step 2: it said add 2 eggs one at a time. Then on step 5, it said to add one egg. I’m confused on the amount of eggs needed for this recipe.

Hi Jiandra, if you sub the vanilla with ube extract for the cream cheese mixture, you can but the cake will only show all ube and no contrast in color.
